Cherry Scones

3/4 cup self rising flour
1/4 teaspoon salt (optional)
1 tablespoon butter
1/3 cup sugar
6 drops almond flavor
1/4 cup dried cherries
1 egg
3 tablespoons milk

In a mixing bowl cut in butter, add sugar. Beat together egg and milk, add to flour mixture along with cherries and almond. Drop 1 tablespoon at a time unto a lighty greased cookie sheet. Bake at 425 degrees for 12 minutes or until lightly brown. Cool on a wire rack. These are tradionally served fresh at room temperature, spread with butter.


Country Breakfast    Serves 4

6-8 slices of bacon, (chopped -optional)
4 cups cooked, cubed potatoes
1/2 cup chopped green peppers
2 tablespoons chopped onions
6 eggs
1 cup shredded Cheddar cheese
dill and ground black or gourmet pepper to taste

Cook bacon. Spray skillet with Pam. Add cooked potatoes, peppers, seasonings and onion to skillet. Cook until lightly brown. Break eggs over the potato mixture. Cover and cook until eggs reach desired firmness. Sprinkle with cheese and bacon. Cover and heat until cheese melts. I cook the bacon in the microwave and use it whole to form a lattice top with a fresh parsley garnish.
